I was baking this vegan Raspberry Blackout Cake with rich dark ganache topping to take to work tomorrow for my birthday. It was going to be amazing and delicious and beautifully decorated with fresh berries on top. Alas, through a series of miscalculations I ended up pouring enough batter for two 8-9 inch rounds into two 10 inch rounds, resulting in super thin layers that broke in half while trying to assemble, and now I’m left with delicious but ugly chocolate raspberry goop.
