Warm Up California Soup

It is raining! This highly unusual occurrence in WYEI’s home state got me thinking about comfort food. As I slowly freeze to death (it is 52 degrees F), I’d like to share my favorite recipe for one of my favorite comfort foods: Butternut Squash Soup. My sushi loving, suntan getting self doesn’t usually venture into winter veggies because it never seems appropriate given my climate, but I think our second rain shower of the season deserves a yummy warm soup to get California though.

What You Need:

2 pounds of Butternut Squash (seeded and cubed)
4 teaspoons Extra Virgin Olive Oil
1 sweet onion (chopped)
1 slice of ham (diced)
3 cups chicken broth
Fresh ground pepper
1 teaspoon dried sage or your favorite spice
Sour Cream

What You Need To Do:
Steam the squash until tender, set aside. In a saucepan, heat the oil and saute the onion and ham until onion is golden. Then add the squash and broth; bring to a boil. Simmer, uncovered until the squash is super soft. This should take about 15 minutes. Take off heat and puree (with a stick blender or in a food processor). Add the pepper to taste. Serve warm with a dollop of sour cream and sprinkled with sage or your favorite spice.

The Holiday Pariah No More

So the holidays are coming up and you know what that means - Fruit Cake of course!!

Would You Eat It?

Now, usually we’d all be clicking this colorful cake as a “delete it” hands down. As comedian Jim Gaffigan explains this cake just doesn’t add up: Fruit = Good, Cake = Great, Fruit + Cake = Nasty Crap. This perennial holiday pariah is often best used as a paperweight instead of as a yummy treat to tantalize your tastebuds. However, we here at Would You Eat It? have scoured the internet, television, cookbooks, and various other sources to find the one true edible fruit cake recipe. Finally, your pleas are answered! And who better to guide you than my personal food hero, Food Network’s own Alton Brown. This guy can seriously do no wrong. Check out his recipe for Fruit Cake here.

No longer must you suffer through half-ton packages of unpalatable cakes sent via mail from dear old grandma. No longer will you be disappointed that even the dog won’t eat it. You can finally keep the Fruit Cake tradition alive but drop all of the cruel jokes about this classic cake. Your guests may cringe at first at the sight of Fruit Cake being served, but they will be nothing but smiles when you serve this delectable recipe.
